The Confectioner’s Gutenberg: Avi Gelbard, Owner and Managing Director of Gilro, Manufacturer of Unique Edible Products

At the age of twenty-four, Avi Gelbard faced an unexpected challenge: His father, who founded the Gilro factory for the production of wafers and ice cream cones, passed away unexpectedly –  and Avi had to fill his father’s big shoes precisely at a time when foreign food producers were launching a massive penetration into the Israeli market, and competition began turning fiercer than ever.  In this chapter, we’ll hear how Avi dealt with difficult challenges, and how he managed to introduce technological innovation and entrepreneurship to the sleepy food-production world.
